The recipe says that you bake it lightly first to set the crust, then pour the filling on while it's hot and bake again. It doesn't brown the crust too much, but makes the whole thing set together after it cools, otherwise the crust would be soggy in the middle.
These sound great! Question: do you bake the crust and then bake the filling? Is it a two-step baking process? Won't the crust get too brown?
